Green Goddess Dressing & Salad

Ingredients

For the Dressing

  • 1/4 cup good olive oil
  • 1 tablespoon quality red wine vinegar
  • 1 tablespoon good quality dijon mustard
  • 3-4 tablespoons cold water
  • Salt flakes & pepper
  • 1/4 avocado

For the Salad

  • Kale and butter lettuce
  • 1/2 pint organic multi color cherry tomatoes
  • 2 radishes
  • 1/2 orange, red, or yellow pepper
  • 1/4 cup fresh parmesan

Directions

For the Dressing

  1. Mix the olive oil, red wine vinegar, mustard, and water. Add salt & pepper to taste.
  2. Mash up avocado in vessel with fork until dressing is smooth (add 2 more tablespoons of water so that the dressing is thinner side).

For the Salad

  1. Chop up kale and butter lettuce.
  2. Halve the cherry tomatoes and place them in a small bowl, drizzle with good olive oil and salt & pepper and let sit.
  3. Dice the radishes thin and chop the pepper.
  4. Place all ingredients in bowl (including tomatoes in the olive oil juices).
  5. Shred the parmesan on top.
  6. Drizzle green goddess dressing over entire salad.
  7. Mix salad and serve.
  8. Shreds additional parm onto your salad if desired!
