Shaved Carrot and Apple Spring Salad

Ingredients

  • 4 Large Carrots, peeled
  • 2 Apples (tart variety), core removed
  • 1 Shallot, peeled, thinly sliced
  • 1/4 cup Gorgonzola Cheese, crumbled
  • 1/4 cup Pistachios, toasted and coarsely chopped
  • 1/4 cup Golden Raisins
  • 2 tablespoons Fresh Parsley, chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • Juice of half a Lemon
  • 1 tablespoon Maple Syrup
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon coarse ground pepper

Directions

  1. Using a peeler, shave the carrots lengthwise and add to a large bowl.
  2. Slice the apples into 1/4” thick sticks and add to the carrots in the bowl.
  3. Add the remaining ingredients to the bowl and toss everything together until well combined.
  4. Store in an airtight container in the refrigerator or eat right away
