Browned Butter Potter's Porridge

  • 1/2 cup Steel Cut oats
  • 2 cups Water
  • 1 cup Milk
  • 1/2 teaspoon salt
  • 1 teaspoon Vanilla Extract
  • 4 tablespoons Butter
  • Heavy Cream, to top
  • Maple Syrup, to top
  • 2 tablespoons Hemp Hearts, to top
  • 2 tablespoons toasted Pecans, to top


  1. Place the water, milk, and salt in a saucepan and bring to a simmer over medium heat.
  2. Stir the oats into the simmering liquid and stir occasionally until thick and cooked through, about 5 minutes. Remove from heat and stir in the vanilla.
  3. While the oats are cooking, brown the butter by melting it in a sauté pan. Continue cooking it over medium heat until the butter solids turn a golden brown color and smell nutty. Remove from heat.
  4. Divide the oats between two bowls.
