Burrata Frittata

Ingredients

  • 1 Cup Arugula (packed)
  • 8 Large Eggs
  • 1/2 Cup Whole Milk
  • 1/2 Teaspoon Coarse Salt
  • 1/4 Teaspoon Cracked Black Pepper
  • 1 Tablespoon Olive Oil
  • 1 Cup Brown Mushrooms, Sliced
  • 1 Small Ball Burrata (about 1/2 cup)
  • 1 Tablespoon Chives, Chopped

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Place the arugula in a classic pie dish, spreading evenly across the dish.
  3. Crack the eggs into a mixing bowl. Add the milk, salt, and pepper and whisk until well beaten.
  4. Pour the egg mixture over the arugula.
  5. Heat the olive oil in a skillet on medium high heat. Add the mushrooms and sauté until golden brown. Spoon the mushrooms evenly over the egg mixture.
  6. Tear the burrata into small pieces and place evenly across the mushroom-topped egg mixture. Sprinkle top of dish with additional salt and pepper.
  7. Bake in the preheated oven for 25-30 minutes, or until cooked through. Remove and let cool slightly before slicing into wedges and serving.
