Ingredients
- 1 Cup Arugula (packed)
- 8 Large Eggs
- 1/2 Cup Whole Milk
- 1/2 Teaspoon Coarse Salt
- 1/4 Teaspoon Cracked Black Pepper
- 1 Tablespoon Olive Oil
- 1 Cup Brown Mushrooms, Sliced
- 1 Small Ball Burrata (about 1/2 cup)
- 1 Tablespoon Chives, Chopped
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Place the arugula in a classic pie dish, spreading evenly across the dish.
- Crack the eggs into a mixing bowl. Add the milk, salt, and pepper and whisk until well beaten.
- Pour the egg mixture over the arugula.
- Heat the olive oil in a skillet on medium high heat. Add the mushrooms and sauté until golden brown. Spoon the mushrooms evenly over the egg mixture.
- Tear the burrata into small pieces and place evenly across the mushroom-topped egg mixture. Sprinkle top of dish with additional salt and pepper.
- Bake in the preheated oven for 25-30 minutes, or until cooked through. Remove and let cool slightly before slicing into wedges and serving.
