Rhubarb & Ginger Sparkle

Rhubarb season brings a vibrant splash to winter, with magenta hues and a bright flavor that pairs perfectly with warm, fiery ginger—a cozy, delicious antidote to chilly days.

Ingredients

  • 10ml Rhubarb syrup
  • 10ml Pressed unsweetened rhubarb juice.
  • 20ml Ginger liqueur (I use The King’s Ginger)
  • 15ml Orange Liqueur (I use Grande Marnier)
  • Pink Prosecco to top up

For the Rhubard Syrup

  • 100ml Caster Sugar
  • 100ml Water
  • 2 Stems Rhubarb, chopped

Directions

Make the Syrup:

Combine all syrup ingredients in a small pan over low heat; stir until sugar dissolves.

Increase heat and simmer for 3-5 minutes until syrupy.

Remove from heat, cool to room temperature, strain into a sterile bottle, and chill.

Prepare the Drink:

In a mixing glass, combine all ingredients (except pink prosecco) with 3 ice cubes.

Stir for 30 seconds and strain into a chilled coupe.

Top with pink prosecco, pouring over a bar spoon before serving.
