Caramelized Pineapple Pie

Ingredients

  • 2 3/4 cups Plain Flour
  • 1 cup Unsalted Butter, cold in cubes
  • 2 tbsp Caster Sugar
  • 1 tsp Sea Salt
  • 3-4 tbsp Iced Water
  • 1 Egg to wash
  • 4 cups Fresh Pineapple, cut into cubes
  • 1 cup Light Muscovado Sugar
  • 2 Cinnamon Sticks
  • 3 Star Anise
  • 1 Vanilla Pod, seeds scraped
  • Pinch Salt
  • 1 Lime, juice and zest
  • 1/3 cup Cornflour (Cornstarch)
  • 1 tbsp Butter

Directions

Begin with the pastry, add the flour and butter to a food processor and pulse to form a sandy texture (alternatively rub in with your fingertips)

Stir through the sugar and salt and add 3 tbsp iced water. Pulse to form a crumbly dough (add more water as needed)

Tumble onto a work surface and bring together, form into two discs and wrap. Chill for 30 minutes.

Preheat oven 350F. Arrange the pineapple on a baking sheet and sprinkle over 100g of the sugar along with the cinnamon and anise. Roast for 15 minutes, or until beginning to caramelise.

Add the pineapple to a bowl with the remaining sugar, lime juice, zest, salt, butter vanilla seeds and cornflour, along with any juices from roasting. Mix and allow to cool completely. Remove the whole spices.

Roll out one disc of pastry large enough to line the base of your pie dish. Leave enough to overhang the edges.

Fill with the cold filling to just below the top, this allows for the filling to bubble up.
