Pear, Mincemeat & Ginger Granola Crumble

Ingredients

  • 6 pears, peeled, cored & chopped
  • 1/2 lemon, juiced
  • 1 tablespoon cornflour
  • 2 tablespoons grated ginger
  • 1 1/4 cups mincemeat
  • 1/3 cup light Muscovado sugar

  • 3/4 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 5 tablespoons unsalted butter
  • 1 teaspoon ground ginger
  • pinch of sea salt flakes
  • 3/4 cup granola of choice

Clotted cream or custard to serve

Directions

Preheat oven 340F. Have a large pie dish ready.

Add the pears to a pan with the ginger, sugar and lemon juice, heat over a low heat until the sugar has dissolved then increase the heat to medium, cook until the pears soften, remove from the heat, and stir through the cornflour and mincemeat.

Add the flour to a bowl and rub in the sugar with your fingertips, mix through the sugar, salt, and ground ginger with a spoon, then add the granola and mix until homogenous.

Spoon the pears into your dish and evenly distribute the crumble on top.
