Get ready for a plate of springtime flavor with divine, fresh salad! Fresh carrots, apples, shallot, Gorgonzola cheese, golden raisins, pistachios, and parsley are tossed in a blend of extra-virgin olive oil, lemon juice, maple syrup, salt, and pepper. An easy and delicious way to welcome the arrival of spring!

Ingredients
- 4 Large Carrots, peeled
- 2 Apples (tart variety), core removed
- 1 Shallot, peeled, thinly sliced
- 1/4 cup Gorgonzola Cheese, crumbled
- 1/4 cup Pistachios, toasted and coarsely chopped
- 1/4 cup Golden Raisins
- 2 tablespoons Fresh Parsley, chopped
- 2 tablespoons Extra Virgin Olive Oil
- Juice of half a Lemon
- 1 tablespoon Maple Syrup
- 1/2 teaspoon coarse salt
- 1/4 teaspoon coarse ground pepper
Directions
- Using a peeler, shave the carrots lengthwise and add to a large bowl.
- Slice the apples into 1/4” thick sticks and add to the carrots in the bowl.
- Add the remaining ingredients to the bowl and toss everything together until well combined.
- Store in an airtight container in the refrigerator or eat right away
