Simple Roasted Tomato Sauce

Ingredients

  • 2.2lbs mixed tomatoes, cut into chunks
  • 8 Cloves Garlic, unpeeled
  • 100ml Olive Oil, plus 1tbsp
  • Handful Fresh Basil Leaves
  • Sea Salt & Fresh Cracked Black Pepper to season

Directions

Preheat oven 320F. Arrange the tomatoes and garlic in one layer on a large roasting tray and drizzle with 1tbsp Olive Oil.

Roast for 30-40 minutes or until tender and releasing their juice.

Squeeze the garlic cloves from their skins, discarding the skin. Add the tomatoes and garlic to a food mill or blender and blend until smooth. Add the basil and some salt and pepper, blend again until the basil is broken down.
Taste, adjust the seasoning and store in sterile jars in the fridge or freeze for winter months
